You take a boxed cake mix (for ease of measuring) and you prepare it according to directions, adding maybe a few tablespoons more water. You add a few tablespoons sour cream/mayo. (It works better when it’s lighter/creamier.) You heat up your waffle iron, spray it with non-stick cooking spray. You pour the cake mix into the center, careful to not overfill it and making sure it’s even, no big lumps of batter. You close the lid & wait a few minutes. The waffle iron stops steaming and you lift out a glorious cake waffle, which you then top with whatever your heart desires.
If your wafflecake doesn’t bake all the way your iron isn’t hot enough. You want to let it cook as long as possible without burning it as well. You want to spray between each waffle, of course.
I made these tonight to cheer up my sister because she’s got an injury, and boy did they cheer up! The best thing about these are that they taste like cake, but have the consistency of a waffle — light, a little crispy on the outside, and soft on the inside, and they make the perfect holder for ice cream.
